[CI] Update macOS runner (keep same compile targets) (#7331) 
* update/add eol dates

* use new macOS images

* [CI] Retire the old macOS ccache keys from the live list

prune-caches deletes any ccache-* entry whose key is not in
LIVE_CCACHE_KEYS, so the three keys this PR renames would be dropped on
the next master run and every macOS leg would start cold.
